Things have been quite crazy around here the last few weeks, only to get crazier! After going to confession yesterday, I realized that (especially with Lent beginning tomorrow) I needed to focus less on the chaos and more on the things that I am thankful for. All of the other stuff just doesn't matter all that much! So here's a list of things that as of recently I am VERY grateful for!
1. I am SOOO grateful for our family and friends who have been so supportive of our decision to adopt. With our first home study group meeting getting closer, we are just thankful each and every day for the support. Not a single person has been unsupportive and that makes our experience so much more wonderful. We cannot thank our family and friends enough for all of their support each and every day.
2. I am grateful for a family I baby-sit for regularly, for all of the stuff they have saved for us. Their youngest child is now 2 and they are unable to have any more children. So, since they found out we are preparing to adopt our first child, they have saved so many of their brand new baby things for us, including: a beautiful crib, with like new mattress and waterproof bed sheet, strollers, bathtubs, sanitizers, etc... This has been such a blessing to us as we are able to plan ahead and save our extra money for the actual adoption, they truly treat us like family!
3. Our jobs. Jeremy has a wonderful job that he loves and enjoys that that supports our family. I am thankful for the flexibility of my job as I can be home when we have people coming to the house to fix the various things that need it! Today, it's the garage door guys! It is also nice, when there are weeks like last week with days off and snow days for the school, I have a week off too, and you better believe my house is as clean as it will ever be! I also had time to baby-sit extra last week and spend some time with kiddos that I miss from the day care!
4. Speaking of baby-sitting, I am so grateful for all of the families that I baby-sit for! They are so wonderful, the kids are so fun and they are so generous! I really love to baby-sit, it is so much fun to be a "treat" for the kids and have a blast playing all evening, while giving their parents a peace of mind knowing they are being taken care of by someone they trust!
5. Tax refund! While it wasn't as much as we had hoped or expected, we are grateful that we have this extra since our garage door fiasco is going to pretty much use it all up!
6. The RCIA team and candidates of this year. Everyone has been so flexible and so wonderful as Jeremy and I tackle the responsibilities of leading it this year. It is such a wonderful group and we don't thanks them enough for making it such a wonderful year of RCIA!
7. Finally, I am thankful for all of the many blessings that God bestows upon us each and every day. He provides us with all that we need and we don't give thanks enough for all of the wonderful blessings in our lives.

Valentine's Tradition
So Valentine's Day is traditionally seen as a "couple's day". However, my family never celebrated it that way. My dad had all girls, so naturally Valentine's Day was a very fun day for us, I mean it's a day dedicated to pink right? So my parents started the tradition of celebrating family and my dad's 5 Valentine's on this day.
That meant that it was one of the few days in the year that we always got out the fine china, we ate in the dining room, had candles and tablecloths, dad cooked dinner (and it was edible :-)) and we had to do the dishes by hand! He always has (and still does) cook prime rib, cheese potatoes and/or noodles, with salad, fruit, and of course dessert. We also always got a flower, a valentine, and we used to get Valentine's socks (now we get Valentine's towels, since we have our own homes!). This is way more special than being at a fancy restaurant with a million of your closest friends/people you don't know, and being rushed to free up a table for the next romantic couple.
It was always a very fun celebration and one that we continue today. Although, now dad has given a few of us to other men to be their Valentines :-)! I think this was a really cool tradition though, in the spirit of love and pink hearts! The way I see it, I have plenty of days to spend with my husband, going on dates and celebrating our love, but once you reach adulthood, the family time (with your parents and siblings) becomes less and you need to take the opportunities to cherish those.
So thanks mom and dad for establishing such a fun family tradition. The prime rib was excellent once again this year and it is so nice to share this special day with you year after year!

Superbowl
I always love the Superbowl. I don't so much care for the football necessarily, but it's always fun to be with friends and/or family and hang out and eat yummy food! So today we're just having a few people over, but I made this really yummy and very cute treat that I found on the back of a Rice Kristpies box!
Kellogg's Cocoa Krispies Footballs
3 Tablespoons butter or margarine
1 pkg regular marshmallows -or- 4 cups miniature marshmallows
1/2 cup peanut butter
6 cups Cocoa Krispies cereal
Frosting
1. Melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat. Stir in peanut butter until meted.
2. Add Cocoa Krispies cereal. Stir until well coated.3. Cool slightly. Spray hands with non-stick cooking spray and shape mixture into 3 inch footballs. Decorate with frosting. Best if served the same day.

They turned out really cute! I also made Homemade pizzas and some Valentine's cookies and some homemade strawberry cheesecake ice cream! Yum!
