Easy Summery Treat
Today I subbed for one of the pre-school aids. The kids rotate bringing in snack for everyone. Today a little girl brought in fruit pizzas for everyone. Now I've always made and had them with sugar cookie as the bottom and to arrange all of the fruit can take time. This mom, however, used graham cracker as a base instead. (I never would have thought of that) So she just used one graham cracker per child, spread cream cheese frosting (not much of it, they're 4 year olds and don't need a lot of sugar :-)) and then she chopped fruit (honeydew, strawberries, grapes, and kiwi) up real small and sprinkled it on top. They loved it! I had one too and it was delicious. If you keep them in the fridge, the graham crackers get soft. I just thought that it was a great, time efficient way to make this yummy summery treat! I'll have to make these for the next potluck/cookout event I attend!
